Any advice apprwciated

Hi all. I am a 20 year old female who weighs about 125 and is 5’2. I am looking for any advice to lose weight and keep it off. I went to college first year and gained the freshman 20 in 2 weeks without changing any diet. I have hashimoto’s, depression, anxiety, endometriosis, and PCOS. We think it could be contributed to that. I went on Monjouro for a year and a half which got me down to 108, but then the same thing happened again and I decided I wanted to try to lose naturally and keep it off. I did during quarantine. I tried the viral glow diet which didn’t work as I stay weigh the same. In addition, I eat high protein/low carb, have started to weigh my foods, and typically eat under 1200 calories a day. I do drink a lot of water at night and chew gum so I am also curious if that is why I am not noticing any difference. I also exercise heavily 4-5 times a week. Any advice will be appreciated.
