Question about the heat deflector
So I got the backyard beast 1200 a few weeks ago and have done about 15 cooks on it so far and have loved everything. I’m doing my first brisket now. Every video I watched on the topic says to put water pans on the bottom shelf and the brisket on the top. The idea makes sense, but with the big cast iron heat deflector sitting right over the fire pot does it really matter if I put the water pans in? Would it have made a huge difference if I just stuck the brisket in the middle of the bottom rack?
