Hello from Canada.
I am looking for help with making Lokum. I have made several batches and just can't get texture to be the nice chewy like the ones I usually get from Turkey. I am using corn starch, sugar, citric acid and tapioca in my recipe. I make my corn starch solution and I add it to the sugar solution. I then cook it for two hours.
I do get the correct look and firmness out of my Lokum but it's not chewy. Would switching to wheat starch make a difference to give me a chewy candy? Any advice would be appreciated.
