Sauce for grilled steak?

I'm having my in-laws to dinner on Sunday. I'm making steak for my FIL because he never gets to have it with his vegetarian wife who will be in Vancouver. He's allergic to red wine. Is there a white that will stand up to steak?
We have two non quadruped eaters. So they will eat birds and fish but no beef/pork etc. What's a nice dueling entree? It's supposed to be pretty hot so probably something that can be grilled.
For sides I was going to do this chimichurri potato salad, some grilled veg and a tomato salad. Then berries and cream or that lime and ritz cracker dessert by Kenji.

We are bumping our kitchen out because it's pretty tiny. Our designer sent the first option (option Banquette) which would add banquette seating and a mudroom. It looked beautiful but I really wanted more prep space.
She sent a second design that adds a peninsula but does away with the mudroom. I love this because of all the light but am slightly bummed about the mudroom. It definitely adds enough counter space.
So my question is, do I go with one of these or do I ask her to make an L shaped kitchen like the banquette one but with counter space or can I live without a mudroom that I haven't had the three years we've been in this house?
Things to consider: I cook a ton and we entertain for major holidays. I'll also take on big projects like a tiered cake and the like.
We're a family of three. We eat our meals in the dining room so we don't need an eat in kitchen. That said, we entertain so it'd be nice to have an additional space. My son used to come hang out and do homework when I cooked at our old place.
As far as a mudroom goes, there's a space for a small closet for some things. We also have a garage for larger items like balls, cornhole, etc. my son isn't really sporty either. He runs and bikes and stuff but we're not hauling baseball gear everywhere every spring or anything like that.

Hello! I am in the beginning phases of a kitchen remodel. I showed my designer this pink crystallo and she said that while she could design a beautiful kitchen around it, I should get a sample to test it for etching.
I'm going to do that but the thing is, I'm not sure I care about etching. Like I know it will ware as time goes on but I feel like it's just the price of natural materials. I don't want quartz. I know why people choose it. My sister is super fastidious and wanted something that would never break down. I feel like I just won't care if life shows up on our counter. Reading reviews, it sounds like it's harder than marble anyway. So anyway, who has had some etching on natural stone and is it really the huge problem you were told it would be?
