On a Weber kettle today

SPG plus Rouse’s Memphis bbq rub. Running 275-300 on briquets and cherry wood. Very pleasant smoke so far. 155 at 5.5 hours.

I was at the butcher today and they had fresh ground lamb fat packaged for an appealing price. I got a pound and was considering rendering it as tallow for brisket smoking this summer. Has anyone ever used lamb tallow when wrapping brisket?
