Are these good enough? although i used a silicone mold they were pretty crispy
This is the recipe i used

Plain Madeleine Recipe
Cake flour 240g
Baking powder 12g
Eggs 200g (47H)
Sugar 200g
Heavy cream 40g
Melted unsalted butter 240g
Vanilla extract 5g

But with browned butter

also i put in the oven at 350 for 16 minutes, maybe i should’ve put for one more minute?

Please help with Madeleine

Hi so i'm baking madeleines for the first time ever to give to the chefs that have been training me in my pastry internship. And i really really really wanna make them extremely good. I'm making a box that consists of 4 madeleines and i have bought a silicone baking tray (i know metal is better but i couldn't find any and now i need to make them asap)

I'm thinking of:

a lemon one with lemon glaze
a strawberry one with a white chocolate shell thingy and filled with strawberry compote
a chocolate one with dark chocolate shell thingy and a cinnamon one filled with pastry cream and topped with cinnamon sugar

But i have lots of questions is it better to mix the chocolate that i'm going to dip the madeleines with coconut oil ?

also i'm wondering about the temperature i should keep them in the oven in i have seen people say start with a high temp and then lower it for the bump

also since im using a silicone mold should i put the silicone mold inside of a tray? or maybe flip the tray (macaron trauma)

also i'm making the batter today (friday) and put it in the fridge to cool and i'll bake them tomorrow
(saturday) but i have to take it to them on sunday will the madeleines go bad? and how do i store them.

Macarons helps

Hi please help me on the first photo i put the macarons in the middle rack at 270
in the second photo i put the macarons in the rack next to to the heat at 280.
You can see the explosion in the middle significantly decreased once i put the rack closer to the heating source however browning happened and they’re kinda ugly

MACARONS 😡

Hello, someone please help. Recently i have been failing every single Macaron attempt and i am hundred percent sure it's an oven issue, so could someone please explain to me how to test my oven.
I have made macarons a lot before and i have never failed without cream of tarter or egg whites powder. i'm planning to buy cream of tarter now
ALSO how come i'm doing well without a weighing scale and now that i use one i keep on failing i'm so mad.

i’m so sick and tired of failing macarons

Someone please help me…
I have been macarons a lot and the last pic is proof that i have succeeded a lot without a weighing scale, with liquid food coloring without cream of tarter or egg white powder.
Recently no matter what i do i keep on failing i tried 3 different ovens i keep on failing no matter what. Also within this batch that i made only one come out right. it doesnt make any sense. I changed the temperature multiple times. Also the 3rd pic is the food coloring i used.

Macarons 😡

I have made macarons a lot before and I have succeeded every single time. Without a weighting scale, without egg whites powder, and without cream of tarter. Recently every single time i try to make macarons i failed and im not sure why. The dark pink batch failed maybe because of excess moisture, i’m not sure, since i used the almond flour that has been in the fridge for sometime or maybe it was because of the food coloring. The others were wonky and had no feet. The thing is i put some of the light pink macarons in the oven and they turn out fine but the other from the same batch failed. Could anyone know why?

Oven Type

Did anyone try using the Bosch Built-In Electric Oven 66L with 3D Hot Air, Stainless Steel – HBJ538ES0M
to make macarons? I would like to try using it to make macarons but I’m more used to home ovens so i’m not sure if it will be alright.
