Looking for a good sub shop.

I’m originally from upstate new york, and there was a sub place called amiels and they make my favorite sandwiches of all time. if anyone has ever had dibella’s, it’s very similar. ever since I moved to Illinois, I’ve been on the hunt for something that comes remotely close.

amiels was known for their roast beef and gyro subs, but they had most cold cuts. they made their own rolls, had soups, they’re basically subway if they were awesome.

most of the sandwich places I’ve come across are strictly italian meats/sandwiches or just have the wrong kind of vibe for what I am looking for, even if they are still really good.

I am located in the southeast suburbs, but at this point I’m willing to drive a bit for a good sub. thanks in advance, and apologies if I violated any rules. first time post in this subreddit.

EDIT: thank you to the number of people who have already given some great suggestions. lots to try!
