What actually happens to our final exam papers once the professor leaves the hall?

Hi everyone!
I've always wondered about the "behind-the-scenes" journey of our final exam papers. Specifically, my curiosity grows because in my country now we are in the finals period

And where we often have a mix of bubble sheets (MCQs) and written essay sections.

Once the professor collects all the papers and leaves the room, what does their day look like?
• Do they go straight to the scanning department for the MCQs?

• How do they handle the grading of the essay parts—is there a specific ritual or system to stay fair?

• And most importantly, where do those papers go after the grades are uploaded to the system?

I’d love to hear from professors or TAs about the chaos (or organization) that happens in the control room after the "pens down" command!
