Onion bolting...help?!

Need some help!

Im a totally garden noob who has just purchased my first house...that came with a large veggie patch and greenhouse (which ive been told over and over by neighbours were very productive).

Que me...inexperienced but keen, ready to dive in.

Last October I planted onion and garlic starters, we eat lots of those so thought it would be a good starting point.

Well hello sunny scotland, we have a heatwave. Everything starts looking very yellow..so I panic and water the hell out of them. Garlic and onions.

Then scrapes start popping up on 1 3rd kf the onions, and I cut them off thinking that will solve the issue of them "bolting"

Which is a new term to me, only to find out once they do this thats them...they need pulled.

The onions, i pulled them, they aren't small...but they arent big. I rubbed them with a dry cloth and now they have no protective skin.

Not sure if they are edible, or not, to chop them up and freeze or not.

I pulled some garlics that had all yellow leaves, and they were caked in dirt and white mould, I gave them a rub and the outer layer came off and the cloves and firm, normal colour and smell great. Are these fine?! When the heck do I pull the rest!

Help fellow gardening people who know more than me 😅 im having fun, thats what counts...but would love to have fruits for my labour too!

(I wont go into the 500 tomato plants, the weird square plot of corn, the strawberry plants, the courgettes, or pumpkins that ive also taken on...😅🤣)
