Change degree

I’m currently a second year Economics student at the University of Greenwich in London and recently I’ve been seriously questioning whether I should continue with this path or move into something with more stability and clearer job prospects.
I’ve applied to a lot of internships and placements including smaller and lower tier firms but I’ve had very little success getting responses. It’s made me wonder whether the graduate market for Economics and business related degrees is becoming too oversaturated especially coming from a non target university.
At this point I’m honestly not too attached to a specific career path. What matters most to me is having stable employment, a decent income, reasonable work life balance and long term security. Because of that I’ve started considering restarting university in something healthcare related like nursing or diagnostic radiography since those careers seem to have much clearer demand and employability in the UK.
The thing I’m struggling with is whether I should finish my Economics degree and try to improve my employability through technical skills and experience or whether it would be smarter to pivot now into a profession with more direct job security.
I’d genuinely appreciate honest advice from people who have been in similar situations especially Economics or business graduates from non target universities or people who switched into healthcare careers. I’m just trying to make the smartest long term decision rather than chasing prestige.
