Entry-Level Woes

I am a MS Civil/Environmental Engineering student who decided to put off going into the workforce a couple of years to bolster my knowledge breadth (undergrad Chemistry BS, Biology BS). I'm now finishing up my degree and noticing there are very few, if any, entry level positions focused on ESA or remediation. Every large firm I look for will have 20-30 open positions for upper-level remediation focused positions, and 1-none for entry level positions. Smaller firms are even worse.

How am I supposed to get a foot in the field with no entry level jobs present? I specifically put off gaining industry experience in chemistry/microbiology to better my future job prospects and do something that combined my love for all areas of STEM. What sort of jobs should I be looking for? I have plenty of water quality knowledge and could pursue water/wastewater or water resources positions, but worry I will get pigeonholed and never be able to claw my way back into remediation/site assessment focused positions.
