I'm moving to linux from windows 11 on my laptop but don't want to lose save files. How do I find them so I can put them on a usb stick so they don't get wiped along with windows?

I'm going to be dual booting mint cinnamon and windows 11. If I realize I need more storage in either side, how would I resize the partitions?
