I’m on hour 9 of a 4-ish lb shoulder (bone-in). I went unwrapped to 185 and then wrapped in paper with no change to temp. Is that normal? Does the process normally take this long?

Cook time started at 225 super smoke for 5 hours. Bumped to 250 since then
