How many branches do you keep?

Out of curiosity, how many branches do yall keep for fruiting? I'm not talking about the central leader, I'm talking about the branches. Most sources say 5 max for optimal fruit production, but I just let mine do their thing.

This has me confused

So i thought Ive seen it all and most of the time, the plants are very clear in what they are lacking/what is causing symptoms, but I cant figure this out.

So i think it is from residual cold snap damage. Located in SW FL and had frost a few nights about 2-3 months ago. Most damage showed up within a few weeks and those have been pitched/salvaged months ago.

Any idea why these are deflating?

Additional info:

Only seems to be happening to the plants Ive previously trimmed rot off of. The plants are soft, but not mushy anywhere. Cut a piece off and it is still green inside. Not over watered, already have my shade fabric up. Just cant figure it out. No pests, no rot, just deflating. Starts at the bottom and travels upward, and has since flattened new growth. I can take more pics if needed. Same living conditions as all my others (50+), and only a handful are emaciated. They are also starting to pale.
