These are starting to look consistent and I know what to do and expect more and more.

540g King Arthur bread flour
100g starter
340g warm water
10g salt
Mix all but salt and let sit for an hour.
Mix in salt and knead for 15m.
Coil folds and burritos (after I coil fold, I act like I’m re-wrapping up a roll of wrapping paper once in each direction) every thirty minutes.
Shape and stick on my oven (house is usually around 70-72° for 4-6 hours.
Stick in fridge for 6-8 hours.
Bake at 400 for 30m with lid on Dutch oven
Remove lid and bake for 25m.
Let cool entirely.
