Hi all,

I’m brand new to sourdough and working on making my first starter from scratch. It’s been a few weeks and a slow process but I’m staying patient.

Basically I started with a recipe I found online that said to start with 60g water and 60g flour. Discard half then feed with 60g and 60g daily and just repeat that process until it becomes active.

About 9-10 days in I decided to move it to a warmer spot (inside microwave) in hopes that would get it growing some more. Basically it has some bubbles but barely increases in size at all after feedings.

The problem is doing the above mentioned process doesn’t result in a 1:1:1 ratio since I usually have about 200g of starter before feedings, discard 100g, feed with 60 and 60. After doing some research it was sounding more like I should be discarding all started except for 60g if I’m going to then feed with 60 and 60.

So I tested this theory by pouring 60g of starter into a jar and following this process. I continued the original process with my other jar just to test things out. Now the original jar is finally starting to expand a little but the 1:1:1 jar isn’t expanding at all.

I guess I’m just confused because when I stared researching yesterday it sounded like I was not discarding enough originally and ultimately underfeeding because of that but now that starter is the one that’s actually growing. Should I just keep going with what’s working or follow the more stringent ratio?
