Fridge Water Line from Galvanized Steel

TL:DR - Can brass be connected to galvanized steel water line?

So I'm wanting to add a water line to my fridge. In the crawl space underneath the water lines are all galvanized steel. My initial thought was splicing in a T would be easier than dealing with crusty threads. From what I've been searching and reading, seems best to remove a run from the threads. I will likely use PEX as I've never soldered before.

What's the best way to transition from galvanized to PEX? I've been reading to using brass to connect to the galvanized is fine, but also reading it's not. So which is it? Thanks!
