Help! Need to figure out my frosting for my son’s cake!

Every year, I make a fairly elaborate cake for my son’s birthday. It’s in June, in California, held outdoors so the frosting needs to hold up to the heat. I’ve tried Swiss and Italian meringue frosting.The last two years, when I added the food coloring, the frosting separated and became unusable and weepy (I used satin ice food coloring gel). I panicked and had to go to Michael’s to buy the stuff that comes in a tub (yuck)
This year, I won’t have my mom helping me so I really can’t afford a disaster. I’m doing a LEGO-head design with rice crispy treat “hair” so the recipe also has to hold up to the weight of the hair. My questions are:
which frosting recipe do you recommend? I’d prefer less sweet if possible. Is cream cheese frosting a possibility?
how do I get that vibrant LEGO figure yellow without damaging the frosting?
can I use the same frosting for filling between layers or do you recommend something else? Cake will be chocolate.
