Is this electrical setup sufficient for my box truck build?

I’m converting a box truck into a full-time living/work-from-home setup and wanted feedback on whether this electrical system seems sufficient or if I’m underestimating my power needs.

Basic details

Planned setup:

  • 4 × 320W Renogy panels 12v/24v (1280W total)
  • 3 × 48V 100Ah LiFePO4 Lithium batteries
  • 48V 5000W inverter with built-in MPPT
  • Alternator charging while driving via DC-DC charger
  • Shore power hookup
  • Propane stove (no induction)
  • No microwave or other major electric cooking appliances

Main electrical loads would be:

  • Gaming/work PC with 3080 GPU
  • 2 monitors
  • Large TV
  • Starlink
  • Fridge
  • Roof AC unit
  • Standard lights/fans/device charging

I haven't actually bought any of the components yet as I am still in the planning phase. My box truck roof rack has yet to be assembled as the parts are on its way but I am planning to build a size of 16ft x 90in. I think I can easily fit 4 panels and more if needed.

Any advice is appreciated. I also may be forgetting some components as this is my first time doing this, and as I mentioned earlier, I have yet to order and start assembling this system together

(I am also aware this will cost quite a bit but want to make sure I don't cheap out on the electrical system as I need a reliable source for work, but would still like to save money where possible 😄)
