Sourdough Starter Won’t Double- help!
So I have my sourdough starter that is almost 3 months old and in that time frame she has not doubled or grown one. She has bubbled beautifully, great texture, etc.
I will admit in more recent times I forgot to feed, at first per recommendation via video on FB I eyeballed and she did great. After a month with no progress I switched to the 1:10:10, again, great bubbles but never growth. More recently I forget to feed her because I switched to the 2:10:10 a day and after a week of no progress I began to forget. I’m almost at my wits end. I want to give up but I’m throwing my last Hail Mary.
I use the King Author bread flower, and warm to room temp water tank water. I have considered it’s too cold and have put her in the pantry but then gnats found her, discarded the top and used the bottom to revive her. I even tried wrapping a towel around her. Nothing.
I have discarded a couple of times and used her in discard baking recipes and they are great and have the sourdough tang. But what I really want to make is some sourdough bread but every recipe requires that it has doubled and again, she has never done so before.
Please, tips needed!
Disclaimer: Yes, she does smell super sour at times but whether I eyeball or ration her feedings that doesn’t change. Also, I have no sense of smell so I have to rely on my family telling me what it’s like.
