Fresh Production

I was recently told that although we are completing the Meat & Seafood fresh production everyday, we aren’t getting credit for it because the numbers aren’t “accurate”. When doing fresh production I normally enter the amount of each item we try to keep out at a time, then later fill in each item as needed throughout the day, but apparently that’s not correct. Can someone please explain this to me, how the system tracks this, and offer me any tips or tricks you have when doing fresh production. I know this is one of the more simpler tasks in the Meat Dept., but when you’re pressed for time and short of help it can be annoying to have to go and search for one of this or two of that when you really don’t need it.
