Colorado bikepacking friends, can you help me out with some suggestions?

We'll be driving from Salt Lake City to Denver this weekend to attend a friend's graduation. Is there an overnighter close to I-70 (starting near Glenwood Springs, Vail, Silverthorne, or Idaho Springs) that you can recommend, that would be doable in mid-May 2026 conditions? There are a lot of interesting things I can see online, but I'm assuming stuff above 10,000 ft in elevation is still snowy and muddy. We'd like to do around 30-40 miles each day, with an overnight camp. We have light hardtail mountain bikes and bikepacking camping setup. We're in our 50s and are relatively fit. Any info or suggestions is appreciated. Thanks!
