Deli

I've debated whether or not I wanted to post here and I think I'm just might not have another option if I'm going to get some honest answers, I started as a backup I have gotten promoted to a department head for the deli, my deli is a split deli which means my bistro is on one side and my slice is on the other side, the hours they give me to work both of these sides together is less than 200, which puts me in a position where I have openers coming in at 6:00 and 7:00 and leaving at 2:00 and 3:00 and my closers aren't coming in until 3:00 until close which is giving us no overlap which means we don't have a whole lot of opportunity to grab our trucks or do our side work, I haven't even taken a break since I've gotten there and it's not because they won't let me it's because if I take a break I won't complete a task, is this normal for deli, and if it is what am I supposed to do?
