This is an odd question, but the woman who owns the restaurant I work at is impossibly strict when it comes to the menu. Now, I make sauce vierge with handfuls of mint, parsley, chives and basil. Concassed tomatoes, softened garlic, shallots and roasted pinenuts, lemon juice/zest and olive oil. There are multiple variations of this sauce, so please no "there is no X, Y or Z in an authentic sauce vierge" my real question is if anyone knows of the name of a similar Spanish sauce that isn't just "salsa verde". Because it's not salsa verde, but it tastes amazing and she literally won't put it on the menu unless it's Spanish, but in this specific case it's actually fucking French! Any other Spanish sauce and tapas suggestions are greatly appreciated. Thank you all
