I make pickled onions, need some meal idea.

I came from a Chinese household and recently have a try with pickling. I make pickled onion as it seems to be the easiest to make but the taste is quite strong, sour and not what I am expecting. Now I am not sure what to do with them. A lot of recipes I search online say it goes well with burgers, tacos or salad. Food that I don't eat quite regularly compared to rice and stir frying food. I tried pickled onion with rice, but the sour taste is so strong that rice cannot cover it for me.

I do like if pickled onions can increase the taste and texture of a food as it is crunchy, but I don't have ideas on how I can incorporate them into my meal.
