Snagged these over the past few weeks; paid between $2.50-$5 each.

So far I’ve only tried two recipes from Make It Easy and one from Vegetable Cookbook for Vegetarians. Would love recommendations from any of the 6!

First thoughts, Make it Easy: LOVE the organization and indexes. Love the concept of the grocery lists, but I don’t trust that they’re accurate (more on that later). Everyone in my household enjoyed the two recipes I’ve tried (Lemony Shrimp Pasta with Artichokes was a good, super-fast “oh shit it’s dinner time and we need to figure it out NOW” largely-pantry meal and Coconut Curry Shrimp with Sweet Potatoes was good and fairly virtuous). However, the book needs an editor/more recipe testers. I dutifully shredded 2 sweet potatoes for the curry shrimp and …. The instructions never specified when to add them. Another recipe calls for artichokes in the title, but the ingredient list doesn’t include artichokes. I’m going to keep the book, but I wouldn’t recommend it for beginners and I’m not going to try to bake out of it (Unless you’ve had success there??).

First impression, Vegetable Cookbook for Vegetarians: IMO a kind of crazy title for a cookbook, but I’m here for it!! Developed by a nutritionist, organized a-z by vegetable (so there’s a broccoli section, a cauliflower section, etc.), a lot of the recipes look great. The one I’ve tried, No Bake Carrot Cake Bites, is nutrient-dense (carrots/dates/walnuts/chia/vanilla/spices), delicious, and my toddler is obsessed. 10/10.
