Anyone know what the 69 timer means? (No rude suggestions!!)

And what is the point for utc time??

First use of the Joetisserie today and very much enjoyed!!

Only question was…
I had trouble getting the open flame at end of cook and had to use more fire lighters to get the direct flame

I had opened both vents fully and tried opening lid

I wonder am I not using enough coal?

Any advice much appreciated!
