Career pivot

Hello! I'm 24yo and i have a bachelor in communications. I then got a masters in economics in energy markets with a master thesis which is an explanatory analysis of the price of electricity using R. I choose this because it was the most interesting and most challenging for me as i dont have the background for it and i loved it. I always liked STEM (wanted to be a theoretical physicist when i was 14-15) due to some factors i ended up in comms. I want to pivot to STEM jobs probably data science or ideally something like AI engineer. What is your opinion on conversion masters to computer science or data science for non stem students like the ones in university of london, in York and in Bath university. My AI reassures me that its totally possible but i would prefer some human answers. First of all how difficult it would be for a non math/computer science background to finish these programmes and second if i finish them would i be eligible to work in jobs like energy quant or '' simpler '' ones like energy analyst because i will always lack the bachelors? Also what about jobs like AI engineer? Thank you for your answers!
