



I have Prinzmetal Angina and Microvascular Angina. I’m currently on Amlodipine. Was resting (I have honestly had a long day) stated feeling wha felt like a wbole lot of PVCs (but not). Have a garmin watch, did a Health snapshot, my HRV is low I know but I’ve never seen whatever is happening here. Normally it’s a series of high and low plateaus…. I started getting some pressure so I took a spray of nitro. Thoughts?
Yesterday, so many of you helped me. 🙏 I did the same process and recipe but extended BF by an hour…the outside of the loaf was improved, and a better oven spring, the inside wayyy less dense, but I’m not sure about if it’s telling me to go even just a little longer next time. The holes seem so inconsistent, but…. honestly just it not being so incredibly heavy is a huge improvement already so you have already helped so much!
500g Canadian bread flour
320-325g water (bottled)
125g starter (~6 weeks old)
11g salt
Autolyse 20mins flour and 300g of the water
Added salt, almost the rest of remaining water and starter. Mixed for a few minutes, a few slap and folds (they don’t seem to work for me) switched to Rubaud method.
Rest 30 mins.
2 sets stretch and fold 30 mins apart
2 sets coil fold 30 mins apart
Bulk ferment until 30-50% rise was 6.5 hours
Gentle preshape and bench rest 30 mins
Shaped into boule, push pulls for surface tension
Into DIY banneton (colander/dish towel)
Counter proofed until poke test good (3 hours)
Freezer for 30 mins. Scored.
Baked in Dutch oven (preheated 45mins at 450°)
20 mins lid on 24 lid off.
