Lagotto Romagnolo grooming

I have an upcoming appointment for a lagotto. It is 10 month old and it will be his first grooming. The owner said he wants a standart lagotto cut and asked if i will shave him or scissor him because he has heard it has to be scissored and he doesnt want it too short. He brought the dog before the appointment so I can see it and its coat is really long, maybe at least 20 cm long and he said they never brush him so it kinda looks like dreadlocks. (I actually heard somewhere that you shouldnt brush a lagotto because every curl is separate and if you brush them through, matting will occur, but i dont know it its tru)

I dont have much experience with this breed and until now all owners wanted them shaved short. So i need advice how to handle this groom. I usually bath the dog first, but with such a long coat maybe i should cut it shorter with scissors and check for matts and then bath it and then bath and brush and dry. I know lagottos should be curly and not straightened like poodles, but of he is matted i guess there is no other choise.

Overall, i would be grateful for any tips about the grooming of this breed.
