Banana Ice ‘Cream’
Lifelong ice cream addict, I recently became somewhat lactose intolerant.
I‘ve always loved banana anything, but especially that elusive banana ice cream.
I have a small electric ice cream maker, one where you freeze the bowl.
I started with a box of Jello banana pudding and pie filling (the instant kind, not the cooking kind). I made the pudding by the box recipe using Lactaid milk, added a couple bananas to the mix, a tablespoon of sugar and a little banana extract.
I let the pudding set up for 10 minutes, then I poured it in the ice cream maker and ran it. It was great. And even better the second day when it was frozen hard.
