I have been experimenting with capacitive soil moisture sensors with esphome, one is in my plant and I have been doing my normal watering cycles just to see what the values look like. The problem is depending on where I place the moisture sensor in the plant, my readings vary by quite a lot. For example on one side of the plant 1.2 volts is completely wet, and 1.4 is dry, while on the other 1.5 is wet, and 2.2 is dry.

Obviously soil and plant roots are not homogenous so this makes sense, but I am wondering how people are getting any meaningful wet-dry scale from these sensors. Are you setting the sensor once and then calibrating for that spot, using a delta value, using multiple sensors, going off of slope, etc.
