Help for hiking Etna from Taormina

I need help for finding a way to reach the higher altitudes of Etna!
I have been looking for the best way to go to Etna from Taormina. We originally wanted to book a tour that combined Etna hike and a winery visit (because we def want to do both), but I have found it impossible to find a tour that combines a) a hike to the summit (or at least 2900m), and b) a wine tasting (so not just a lunch).
Now I'm thinking the only way to do this is by renting a car... But am unsure about driving there, any experience would be received happily, especially regarding the drive from Taormina to either Etna north or south entry point, and also from Taormina to Savoca (which we would also like to visit).
It's also unclear to me if wineries are places where you can just drive or do you have to reserve a tasting or a table?
