Advice on brewing/distilling citrus fruits?

Howdy,

I live near a few bars, coffee shops, etc. that use citrus peels for their drinks. So many that they have too many of the fruits to do anything with and just throwing them away once they're peeled.

So I was curious if it's at all possible to brew or distill oranges, lemons, or limes into something worth drinking.

Everything I've looked up says they turn to crap if you try to ferment them, especially if you don't have the peels to work with, so I was hoping someone would have some advice.

My apologies if this is the wrong place, I would prefer to make these things into a liquor if possible, but I'm just looking for some guidance and general direction at the moment.

Edit: Sorry I should have mentioned, all of the fruits don't have peels.

I know so many recipes involve adding peels or zest, and I should have mentioned that sooner.

This is the issue with using food waste.
