15 lb chuck roll

First time trying this. Salt and pepper. 9 hrs 225F until stalled at 155-160F internal. 5 hrs wrapped until 208F internal. Was targeting a lower final temp but still turned out really good. The shreds are a little soft, but this will make great sandwiches.
