Looking for upgrade advice – already planning RAM and GPU upgrade

Playing at 1080p. I have already decided to upgrade RAM and GPU.

For RAM I am going to replace my current stick and run a dual channel kit. I am deciding between 2x8 GB (16 GB total) or 2x16 GB (32 GB total). Is 32 GB overkill for gaming at 1080p or is it worth the extra cost for future proofing? What speed would you recommend for B460 which supports max 2933 MHz?

For GPU my PSU is 500W which may limit options. What is the best GPU I can realistically run on this PSU, and is it worth upgrading the PSU to open up better alternatives?
