With infinite time and space you would be reincarnated infinite times assuming things can happen at random

Think of the theoretical scenario involving infinite monkeys pressing keys at random on a typewriter forever. Immediately one monkey would start writing the bible, one monkey would describe in atomic detail how you will die, many of them will type gibberish and so on. If space and time are also infinite and assuming the universe doesn't have a definitive end (we don't know for sure if it does) after trillions of years of matter colliding and interacting randomly eventually every atom that makes up your brain as it is right now could randomly form together again. Is there anything that would prohibit this possibility? How do we know this hasn't already happened. Maybe I am a consciousness that formed at random with fake memories. I understand this possibility involves a lot of assumptions but it seems plausible to me and I've thought a lot about it.
