I just got a new stainless steel pan yesterday.

My partner and I have both used it exactly once each - she cooked meatballs in it, and I cooked some marinated kangaroo steaks with onions and veg.

The pan looks a bit perma-burnt already! I followed the generic advice I’ve seen around (pre-heat, check with water and don’t use until the water balls up and evaporates, then oil, then meat, let the meat release itself, etc) but yeah, looks not so great.

I tried to add a picture but got yelled at by the automod :(

Is there something obvious I’m doing wrong here? Maybe I’m better off just getting another kind of pan…
