How to get into working part-time as chef/in a kitchen whilst working 9-5PM (London)?

I've been looking for kitchen porter roles last month or so and havent really come across much. Does anyone do this/having tips to getting part time work in this sector?

How an earth do I create a restaurant/takeaway style green thai curry?

The amount of times I've made green thai curry paste from scratch or using mae ploy, yet my curries are always massively underwhelming/average.

I'm based in the UK, and the green thai curries I order from takeaways/restaurants or mostly amazing. One in particular blew me away, but that has closed now - the food tasted really fresh, delicious and it was just generally amazing.

I've followed Paillins Kitchen recipe:

I'm following these to a T:

  • Creating the paste from scratch, using mortar & pestle
  • Using kaffir lime and all the proper ingredients (except for coriander root, I use coriander)
  • separate coconut oil out when cooking in paste
  • played with ratios of palm sugar, fish sauce and kaffir limes

I'm almost certain restaurants/takeaways are using cocaine or something in there, as I have no idea how they make it taste so good.

Does anyone have any tips to get me closer to making that delicious green thai curry?
