Opened a speakeasy in May, owners are awesome and I got to set it up and pick every piece of equipment.

2 oz mean mule poblano agave spirit
1 oz house made lime cordial
1 oz lime juice
1 oz heavy cream
1 egg white

Add all ingredients to a tin and dry shake. Add ice (more than a little but not a full tin) and shake until it all breaks down. Strain into a chilled coupe.

I was playing with garnish, the thin sliced lime floating in foam was nice but it def needed a bit of lime zest on top.

This drink plays well with citrus vodka in place of agave spirit.
