Ricotta & Broccoli Rabe Pie

It's in the oven. The dough was not as hard as I feared. I made some tweeks to the filling - I sauted the garlic and red pepper flakes then added the broccoli rabe washed with a little water and covered the pan until the broccoli softened.  Then I added in the anchovies and cut up the stalks in the pan. I  keep cooking until there is no more water.  Let it cool and add it to the cheeses.  I also omit the mashed garlic and the salt.  Instead of salt, I use a sharp dry provolone, roughly grated.  Otherwise, I followed Claire's recipe.

We're taking this one to the beach tomorrow. Will send a slice from the sand.

BTW: I rolled up the pie dough scraps, folded in some of the extra cheeses and some pepper. Sliced into strips and twisted. Baked with the pie. Enjoyed these with a glass of wine to celebrate Momma always said it's a sin to throw away food 😎

Looking for help with the Ricotta and Broccoli Rabe Pie

I really want to make this. It is very reminiscent of a pie we call "Carnival Pie" which has all these cheeses (+ dry provolone) and bits of those cured pork products we all adore. I have several family members who need to stop eating these meats, so I want to try this, BUT seriously I could use a video! There's so many steps to the dough. I typically use short crust, but I can see how this olive oil crust could be a big improvement. Does anyone have any experience or a good link I can use to wrap my brain around this?

Rice Pudding Cake with Strawberry Caramel

Found Claire’s book in the library and my wife picked out this for Mother’s Day. The recipe looks easy but standing and stirring the rice custard was really challenging and I think I would have enjoyed the very delicious pudding more than the dense “cake”. But the caramel sauce was the star here.

What else can I bake before I have to bring the book back???

Here is the cake for my wife's birthday. Thanks to fellow baker who sent me the recipe.

This cake is very close to the recipe/video. I love the frosting!!! I added a splash of bourbon.

It is far from perfect - I didn't completely stir the cocoa/yolk mixture into the hot milk so the pudding always had unincorporated bits of cocoa in it. Also my oven is not level, which makes baking even layers a challenge. My kitchen is in a NY City apartment, so the floors are all wonky. Also storage is premium, so I don't have a cake stand. I put the cake plate on a cake pan and tried to rotate it. No ideal. The layers started sliding, so I stuck those chocolate covered cookie sticky (pocky) in for support then put in in the refrigerator for 30 minutes. The top are chocolate butter biscuit crumbs because we like a little texture.

Friends & Grandkids coming over tomorrow to eat it. I may add some meringue cookies around the bottom for color. Or I may take a nap.
