Caught in a weird loophole, Bought a car in KY with a lien on July 2nd, DMV closed Friday due to Holiday, can I drive it this weekend?

Hey everyone, looking for some advice on Kentucky traffic laws and police discretion for this holiday weekend. I bought a car on Wednesday, July 2nd. But the car has a lien on it. The seller and I processed the payoff, and I have the UPS tracking info/proof that the payoff was sent to the lender but it can’t process until Monday. I have the notarized title, a signed Bill of Sale, and my driver's license, I already added the car to my Progressive policy, so I have active, full insurance coverage but because of the Friday closures and the long July 4th holiday weekend, the County Clerk/DMV has been completely closed seemingly everywhere,so I can't officially transfer the title or get my own plates until Monday morning. The seller told me I could just drive it on his plates for the weekend, but I know KY is a "plate to customer" state so I don’t think that will work and using his plates is illegal misuse. However, the legal 36 hour plateless grace period has technically expired since I bought it Thursday Morning. Has anyone dealt with this in KY? If I need to drive the car this weekend, am I safer driving it completely plateless with my paperwork on the dash, or should I leave his plates on? How strict are KY cops usually about this when the DMVs are physically closed for a holiday?
