Maybe it’s time for a new build..help?

Avid Souls player here. I started my souls journey with Elden Ring, where I immediately went on to play all the souls games after. I beat Elden Ring and the DLC a couple years ago and have always loved the bonk STR greatsword builds and DEX bleed builds. My first playthrough was basically half STR bonk build, then I respecced and finished the second half as bleed DEX. My DS1 build was bleed, DS2 was strength, and DS3 was bleed… lol you can see the pattern.
Now I’m coming back for another full run and somehow I’m already falling back into another strength greatsword build lol.
Before I get to far in my 2nd run, I wanted to ask what builds you all recommend trying. I still love a good bonk or bleed setup, but I know there are so many fun builds out there that I never really explored on my first run, so wanted to see what you all love and what recs you might have!
