Rim brake callipers - Shimano Ultegra r8000 v Sram Apex.

Why are the SRAM Apex considered so inferior to the Ultegra callipers - rim brakes. I have SRAM Apex from 2012 and seem great stopping power, and from what I've read are significantly lighter than the Ultegra. I feel any more stopping power would throw me off the bike! I only weigh 56 kilos, not sure if that plays into it - maybe Ultegra are better for heavier riders? Just interested to know - is the Srams build quality inferior or something like that?
