Gravel bike recommendation for both road and gravel

I've been looking at gravel bikes for a while now and am wondering if anyone has recommendations on a gravel bike that rides great on the road as well gravel. At the moment I'm leaning towards the Stinner Refugio full build with SRAM Force XLPR AXS drivetrain. (https://www.stinnerframeworks.com/products/refugio-podium?variant=44600915198138)

For context, I live in the LA Foothills and ride my road bike roughly 50-70 miles / week with about 4k-6k feet of climbing for the week. I'll take my road bike up on some of the truck trails in the area but descending can get a bit hairy at times. I'd love to get on a gravel bike and more comfortably ride these truck trails and even some (less technical) single track. I'm anticipating roughly 60% road, 30% truck trails, & 10% single track with a focus on climbing, descending, and once in a while taking it out on a bit longer road rides (70 miles+ of road). I grew up riding a hardtail titanium Yeti mountain bike in Colorado, so I'm also quite familiar with the feel of a titanium hardtail on single track, but that was a bit ago.

Any recommendations on great all-around gravel bikes that ride comfortably on road or even just things to look out for when putting the build together are all greatly appreciated.
