Was in the mood for a ribeye. First time cooking and grilling and this is how my first steak came out. How did I do

I’ve owned the wave+ for about 8 months now and man it’s been awesome. But I have a question should I add thread locker to the screws where the knifes are because idk what I did every time I pull the knife out it tends to get really tight then loose again the whole screws turns too
