What is Your Favourite Type of Fries for Poutine?
Basically, as the title states, what is your favourite style of fries for a poutine? The shape? Method of cooking? Brand if store bought? If they're potato at all (but we all know if it's not potato, it's a crime). Cheese? Gravy? Condiments other than gravy? Favourite fast food poutine?
I like straight cuts. I love making my own, but if I was to buy a brand, it would be McCain or Cavendish, but it really doesn't matter.
They have to be baked or air fried well, so they are crisp but not crunchy, I want potato in there still. I also love quick, deep-fried french fries, so they still fit the criteria of crisp but not devoid of potato fluff.
As for the potato, if I'm making them myself, I prefer a Russet, but I can't always get them a decent size, so I'll settle for a Yukon Gold since they also come quite large.
For the cheese, it had to be curds. I can deal with shreds if I'm lazy or tight on cash, but curds all the way. I don't have a specific brand, but I try and find ones from Québec or at least not from somewhere that isn't Québec or Wisconsin. I live in Nova Scotia, so cheese curds are plentiful regardless.
Now, the gravy type is a point of contention in my house. I prefer a brown gravy (beef usually), but my girlfriend prefers a light gravy (turkey or chicken). Now I don't hate a poutine with light gravy; it's still delicious, but I like my gravy brown.
Fast Food poutine can be hit or miss. Honestly, though, KFC and A&W have never let me down in a pinch. As much as I prefer homemade poutine because I can control the cook on the fries, I can and will deal with a soggy fry because eventually, they get soggy anyway.
Extra condiments are a touchy subject, I'd imagine. Now, I don't hate putting ketchup on my poutine. Sometimes, you've got the itch, and it scratches it. It's sweet, and I like the temperature contrast between the fridge cold ketchup and hot gravy. Out of 10 times, I'd say maybe 1/10 I'd put ketchup on it. Also, the poutine needs a bunch of pepper.
Other extras that I occasionally enjoy are ground beef, fried onions, and peas. Someone from NFLD introduced me to that, and it's good.
