I think I finally get it
So I started making sourdough bread a year ago. There were some good and bad breads but the consistency was never there. Didn’t know what I did wrong. But now I don’t really care about the exact steps I take to make it, I just know when the dough is ready (something just clicked) I know they are not perfect yet but I’m really proud of myself and excited to get better each loaf :)
Recipe
Starter
1:5:5 (starter:flour:water) - I don’t really measure it but could be 10g:50g:50g
450g flour 550 (it’s a German ap flour with 12g protein)
50 g wholegrain rye flour
320 water
10 g sea salt
I mix everything except the salt together in a stand mixer (speed 2) unteil I don’t see any flour. Then I add the salt after 30 minutes and mix it again for 1-2 minutes. After an hour I do my first stretch/fold and slap/fold. Then again after another hour. The next three hours I do 3 coil folds. (Sometimes just 1 or 2) and then I shape it and put it in the fridge overnight. The next day I preheat the oven with the Dutch oven in it (250 C) and bake the loaf with ice cubes and the lid on for 20 to 25 min and then another 20 min with the lid off (230 C)
