Has anyone had experience cutting out sugar and/or supplementing thiamine (aka Vit. B1)?

I am a physician with EOE, first impaction aged 10, wasn’t diagnosed until I was an attending physician aged 31.

I have PPI responsive EOE. I was on omeprazole for eight years, which put me into remission, but by the end I was having a ton of gastrointestinal symptoms, and ultimately went off of it.

I then tried 6FED, which didn’t seem to help.

I am currently doing allergy shots, and maintaining a mild elimination diet (strict no gluten, minimal dairy).

One thing I have begun to notice is that any kind of excessive sugar use triggers a lot of GERD for me, which in turn causes my EOE to flare up.

I was doing some research about any connections between sugar and EOE and came across the following article, curious if anybody else has come across it, or had experience with cutting out sugar and seeing a response on their eosinophil counts.
