How to achieve same flavour i had a year ago ?

I have been trying to make good mead and I like the ones that are bitter-sour. Around a year ago I used wild berries and fruits I got from foraging in mountains clss to 1.5 pounds I guess. It was fantastic it cleared our like in a 4 months tasted bitter-sour didn't use any yeast. I have been drying to get the same result since and couldn't get why.

Fruits that were used are

Gooseberry Ribes

Bird Cherry

Red currant

Black currant

Red Hawthorn
